PSU-DOST 1 Food Innovation Center organized a comprehensive hands-on training on thermal processing in collaboration with the Department of Science and Technology – Industrial Technology Development Institute (DOST-ITDI), which was conducted last September 17-18, 2024, at the PSU-DOST 1 FIC laboratory. The training aimed to enhance the expertise and capabilities of researchers and Micro, Small, and Medium Enterprises (MSMEs) in Region 1 on the safety validation of ready-to-eat (RTE) products, in particular, for use in disaster situations, utilizing the water retort machine developed by DOST.
The program has been attended by food research people and representatives from different MSMEs within the region. It started with an introductory program on the basic principles of thermal processing. Participants engaged with the actual operation of the water retort machine and gained hands-on experience in the processing of various food products. The lethality values of these products were determined, which therefore ensured they met the minimum safety requirement for consumption.
The speakers of the event comprised experts from DOST-ITDI, namely Mr. Rommel Belandres, Ms. Ma. Bettina Macaraeg, and Engr. Rufino Barcala. Their knowledge and expertise made them the best speakers who contributed invaluable insights on thermal processing and how it may ensure food safety.
The training significantly imparted skills and knowledge to the participants in producing safe and high-quality RTE food products using the water retort technique. PSU-DOST 1 FIC collaboration with DOST-ITDI played an essential role in strengthening food safety standards as well as disaster preparedness capability in Region 1.
